In between the Les Mills Virtual Workouts, I have been finding I have more time to cook! This is one-skillet chicken with tomatoes and potatoes.
Directions
Marinate the chicken thighs or drumsticks in olive oil, dash of red/black pepper flakes and Rosemary sprigs.
Spread a little olive oil and seasonings in the dish and place chicken, skin side up, over quartered baking potatoes, yellow onions and cherry tomatoes.
Top with basil. Cover. Bake at 450 for 30 minutes. Remove cover and turn oven to broil. Cook 10 – 15 more minutes and Voila!!
